Delicious Mushroom Pasta Recipe for Any Day of the Week

Looking for a quick, delicious and healthy pasta dish? Look no further than this simple mushroom pasta recipe! With a few basic ingredients and minimal prep time, you can have a flavorful meal that the whole family will love in no time.

Gather Ingredients.

The ingredients you need for this dish are 8 ounces of mushrooms of your preference (button, portobello, shiitake etc.), 1 tablespoon of butter or oil, 1 teaspoon minced garlic, 3 tablespoons sliced scallions, 2 cups cooked pasta such as penne or fusilli, ¼ cup chopped parsley and 2 tablespoons grated parmesan cheese. Feel free to modify any ingredients to fit your taste!
Before blending the ingredients together we need to cook our mushrooms. Dice your mushrooms and create thin slices if needed. Heat up a pan with butter or oil and add in the garlic, scallions, and diced mushrooms. Sauté for about 5-7 minutes until lightly browned on each side (optional: season with salt and pepper). Once cooked, set aside and let cool for a few minutes before adding to your pasta mixture. Now that you have all of your prepped ingredients, it’s time to mix everything together! Add the cooked pasta in with the sautéed mushrooms, then toss in chopped parsley. For last minute flavor, top off this dish with grated Parmesan cheese before serving.

Directions:

Pound chicken fillets slightly with steak/kitchen hammer.

In bowl,add chicken fillets,vinegar,soy sauce,ginger garlic paste,black pepper and salt,mix well & marinate for 20 minutes.

Grease grill pan with oil,place marinated chicken fillets and grill from both sides until done (4-5 minutes each side) & set aside.

In pot,add butter and let it melt,add onion,garlic and fry until translucent (2 minutes).

Add mushrooms and mix well for 3 minutes.

Add all-purpose flour,black pepper,paprika powder,salt,thyme and mix well for 2 minutes.

Add stock and mix well.

Switch off the flame,add cream and mix well.

Add milk and mix.

Add pasta and give it a good mix.

Ingredients:

  • Chicken fillets 2
  • Sirka (Vinegar) 1 tbs
  • Soy sauce ½ tbs
  • Adrak lehsan paste (Ginger garlic paste) 1 tsp
  • Kali mirch (Black pepper) crushed ½ tsp
  • Namak (Salt) ¼ tsp
  • Oil 1 tbs
  • Makhan (Butter) 2 tbs
  • Pyaz (Onion) chopped ½ Cup
  • Lehsan (Garlic) chopped 1 tbs
  • Mushroom sliced ½ Cup
  • Maida (All-purpose flour) 2 tbs
  • Kali mirch (Black pepper) crushed 1 tsp
  • Paprika powder 1 tsp (optional)
  • Namak (Salt) ½ tsp or to taste
  • Thyme ½ tsp
  • Yakhni (Stock) 1 & ½ Cups or as required
  • Cream ¾ Cup
  • Doodh (Milk) ½ Cup or as required
  • Farfalle pasta 200 gms boiled as per pack’s instruction

Boil Water and Cook Pasta.

Begin by boiling some water in a pot over medium high heat. When it starts to boil, slowly add your desired pasta to the water and cook for 8-10 minutes or until just al dente. As you wait for the pasta to boil, get out your mushrooms and chop them into small pieces. Once your pasta is cooked, drain it in a fine mesh strainer and set aside.
Heat a large skillet over medium heat and add a tablespoon of olive oil. When hot, add in your minced garlic and oyster mushrooms and sauté for 3-4 minutes or until the mushrooms are lightly browned. Then add in your pasta, vegan cream sauce, cherry tomatoes, and spinach to the skillet. Stir everything together and cook for about 5 minutes or until the vegan cream sauce has thickened slightly. Serve warm with parsley (optional) and enjoy!

Prepare the Sauce.

In a large skillet over medium heat, add 2 tablespoons of butter. When melted, add the chopped mushrooms and saute for 2-3 minutes or until they become golden brown. Now add 1/4 cup of white wine, 1 tablespoon of minced garlic, and salt and pepper to taste. Continue cooking for an additional 3-4 minutes until all of the flavors have melded together.
Once cooked, add 2 tablespoons of all-purpose flour. Reduce the heat to low and cook for another minute until the mixture is slightly thickened. Now, slowly stir in 2 cups of vegetable broth and whisk until smooth. Let the sauce simmer on low heat while stirring constantly for 5 minutes or until it reaches a creamy consistency. Now remove from heat and set aside. Now you are ready to make your mushroom pasta dish!

Sauté Mushrooms, Onions, and Garlic Together for Flavor.

Next, add 1/2 cup of sliced onions and continue cooking for another 3-4 minutes. Once the onions have softened, add 1 tablespoon of minced garlic and cook for an additional minute until fragrant. Finally, season with a pinch of salt and pepper to balance out all of the flavors. This sautéed combination of mushrooms, onions, and garlic will provide a delicious base for your pasta dish!
Once the mushrooms have softened and released their juices, it’s time to move on to the next ingredient. For this step, you want to add a 1/2 cup of sliced onion, This will provide sweetness and depth for the overall dish, making it easy for all of your other ingredients to blend together seamlessly. As the onions cook for 3-4 minutes, they should soften and start to sweeten up. From there, stir in 1 tablespoon of minced garlic and cook for an additional minute until fragrant. Then season with a pinch of salt and pepper and you will be ready to continue building your pasta dish!
